So I've been looking at what switches are available: seat heater switch, hazard switch, syncro switch. Which one would you guys prefer for the manual switch for the fog light?

No, been working on mine the last couple of days. I have no idea where the wiring starts on the other end of things, but it's not "hot" at all. I tapped into the wiring just before the firewall...
