Painting the calipers shouldn't be too difficult and if done right don't look cheesy either. It's just removing the wheels and calipers if I'm not mistaken (I had a friend do mine for me on a previous car), then using proper caliper paint.

As for the pedals, check out this DIY thread about installing the Touring pedals on your car. Doesn't seem too difficult and I may try it in the future myself (base+sport trim).
