Use the paddle shifters if you want to control shift points. Otherwise, the car is giving you delayed responses based entirely on your throttle input.
The flashing light is just a shift indicator. You can set the light to flash at any RPM you want (in 500 RPM increments) in the settings found in the left gauge on the dash cluster.
