I'm pretty sure this is common, they will follow you closely at night to see if you'll take off or break the law some other way, blinding on purpose so you can't see that its a cop.

This is unheard of. It seemed like the officer was trying to get you to do something stupid. Good that you held your composure. If that were me, I'd do a brake check first to get him to stay back....
