Ok, now I'm hungry.

Now that it's getting cooler, I can get another couple of pork bellies cured and cold smoked. Homemade bacon FTMFW!

Oh man I still have about 10 pounds in the freezer! I bought a nice meat slicer this past year and have put it through its paces!. I have normal thin cuts all the way up to thick cut, cook in the oven bacon!

My freezer's almost empty. Can't replenish the supply during the summer. It's hard to cold smoke something when the ambient temperature is over 100.

Yeah that would suck lol! I have been enjoying the 60's here too much lol My goal this winter is try and "cold" smoke some fish.

NO ONE would get any work done, the most high paying job in America would be techs that could replace the keyboard as fast as possible lol. that would be a great job...screw the people needing a new keyboard lol this one is mine.

If I had a source for good fish to smoke, I'd be all over that. I'll give it a shot, but the saltwater stuff is all I can get reasonably fresh. Once it's 80 degrees out, I'll have about ten pounds of bacon, a lot of cheese, some garlic and jalapenos going in for a solid 12+ hour cold smoke over pecan and oak from bourbon barrels.
