My air conditioner, humming properly outside, and wondering, as a somewhat new home-owner, what the ramifications will be when it doesn't. Will the home warranty cover anything meaningful? Will it happen on a 100*F day? What will my situation be when it does?

Probably not. But it depends on your policy.

According to my HVAC guy, the first few weeks of cooling season (units have sat all Winter) and during heat waves (greater strain on unit) are when the most problems occur.

Replace your filters regularly (about once a month for most people) and get everything checked out at 2-3 year intervals.
