Coconut chicken over spinach salad. Sounds weird but it is delicious. Here's the recipe if you want to try it:

Took 1/2cup of almond flour 1/2cup unsweeten shredded coconut(i used an actual coconut & shredded it there was no unsweeten) 1/4tbs of seasalt mix the 3. Get an organic egg and beat it on the side to be able to bread the chicken. Bake at 385-400°F for about 25-30 min and place over greens like a salad.

Chicken breast (cook for 10 then pull out), spinach, diced tomatoes, and mushrooms (cook in the same pan), after about 10 min put chicken back in and cook for about 5 with a lid on.

Sprinkle Parmesan cheese and crushed red peppers.

With that chicken breast, are you using any olive oil in the pan?

Simple recipes are awesome! I like being able to throw something together in 20 minutes, however, come the weekend I'll go all out!

Yep, just a tbsp. to start the chicken out. With all the water in the diced tomatoes you wont need anymore. Don't forget the minced garlic (i buy it in a small jar).

Last night I had the grilled sausage and peppers rustica at the Olive Garden. It was pretty tasty. :yum: :tup:
