This was probably the best thing I ever "baked" outside of random french breads. Unicorn bagels. Screwed around with the ph levels of the water for a good hour when boiling them.

I hate cooking in restaurants and have no ownership experience running a place. I just like to experiment.

One thing I do want to try some day is to open a stand at the New York State Fair with me selling "Fried Artichoke Hearts". They're something I have never seen another restaurant or venue serve before.

And I know without a moments hesitation they'd sell very easily. Canned artichoke hearts quartered, tons of italian seasoning and panko bread crumbs. Fried in peanut oil and dipped with putanesca sauce.

If you're out this way again (and restaurants are open) I know 2 very good places in the area. I love sushi.

We usually have them on the salad bar at work. I'll have to try frying some up. Panko or maybe a tempura batter would work too.

I had a good night last night on my street corner. All my clients wanted riding lessons. My knee was good. Dusting off the shorty shorts did the trick. I now have more mod money.

I've only ever used italian or panko. Be sure to go heavy on garlic powder, onion powder, & paprika. Use half the amount of oregano leaves, basil leaves, cumin powder, & parsley. Then just so a few sprinkles of nutmeg and ground mustard.

Fry in oil until dark golden brown. Let sit on a cooling rack to drain properly.
