I've had best success doing a quick fry in a saute pan with canola oil and then moving to the air fryer to finish. The canola will help cook the breading while the Panko absorbs most of the oil. The the air fryer acts as a convection and will crisp up the actual Panko from the oil imbued in it.

I just did a quick egg wash and dipped in panko. into preheated air fryer basket. It worked out really well. 400 for 10 minutes.

Feeling lazy. Going to make some aglio e olio with some toasted breadcrumbs and scallops. Gotta fancy it up somehow.

Still crunchy and cooked through? I've noticed some breads tend to absorb the heat more and leave the center like warm.

yeah it wasnt a super thick coating. crumbs were toasted nice and fish was perfect all the way through and flaky. I used Pollock cause thats what I had on hand but I think any non too thick fillet would work well.
