He says get to at least 300-400 miles on it and I can go crazy. Don't know if that is best practice because I would hate to open her up again.

I got a 2020 Z In the beginning of may. I am currently breaking in the engine. Nissan recommends 2000 KM (1200 miles) of keeping the RPM under 4000.
BTW, I am only at 650 KM!

Ew. Have you considered taking a weekend and driving 1350 km (no idea what that is in miles) on a highway, just to get it over with? Does Canada have highways?
