The price for the gasket replacement is a joke. For a reputable shop that's appx 6-7h of work. So even if they charge $200 per hour, that's not nearly as much as they quoted you.

What the above already suggested - get a pressure gauge, it's good to have it regardless of your gaskets, and with it you'll always know exactly where you're at - if there's reason to worry or not.
