I mounted a top fitting 19 row Setrab cooler on my 2010 370Z about a month ago, and I have it taped up around town, because the oil temps are too low. Is your oil feed line to the cooler, the top fitting or the bottom? It should be the bottom fitting, on a side plumbed cooler. If it's the top, most of the oil bypass's the cooler fins.
A few oil temp norm's:
oil should run between 190 & 230 F
Max oil temp should be 250 / 260 F
If oil is not hot enough, water & gas in the oil, do not get boiled off
Synthetic oil can run hotter, but there is no real gain
