Your questions seem to be aimed mainly at fuel mileage. Very few (if any) people on this site bought a Z because of the fuel mileage.

"what your individual and personal RPM limits where for shifting and down shifting?"
For "normal" driving, I usually upshift any car from 1500-2500 RPM, depending on the circumstances. Downshifts are made so that RPM doesn't jump too high.

"When on a hill do you coast on lower gears? Why or why not?"
Same as coasting on any stretch of road - I try to keep the RPM in a range that will give me some power if I need to get out of the way in a hurry.

"Do you hit the gas while going up hill or do you just take your time at a leisurely pace?"
Depends on the circumstances. I usually keep the same throttle pedal position (if there is no traffic) or bump it up just enough to maintain speed.

"Windows up or down?"
Down, unless it is terribly hot/cold or precipitating.

PS: If you are worried about MPG, check out some of the hypermiling sites. (Or get a different car.)
