I just checked the STR section of the 2009 FSM and it looks like all you need is a single-pole switch in parallel with the clutch pedal switch. When the new switch is open, starter works normally. When the new switch is closed, the car will start without clutch pedal being depressed.

Edit: In addition to the "pedal pushed" signal to the computer, the power for the starter relay coil goes through the switch so don't skimp on wire size. Use something close to the factory wiring.
