I might be able to help you a bit here, BigAudioFan will probably chime in and lend his expertise too, it's good stuff to heed too! Hope you can use what I lend and others do. I just finished my AVIC-X930BT install about 30 some days ago, so I can tell you pretty good on all the things you need-

1. Bypass - Check on AVIC411.com forum which will lead you right down the correct wires to Ground to the MAIN CHASSIS Ground - Solder is the best solution, however T Taps and Such will work as well. For a majority of the AVIC units and BHS units the Harness is the same as the older AVIC's, (Not identical but similar in many ways) Essentially you will Ground the Parking Break Wire, Black Harness Ground, Yellow/Black Wire on AV Harness (2nd harness which has the RCA wires in it), and one other wire all together, after that you can wire to the Black Wire which comes with the Metra Harness built in, or the Scosche. Both have this with a black wire and Ring Terminal. I grounded mine up to a bolt up behind the Cubby. You can see it when you pull the dash off. (that only takes about 15 min tops. Really simple and easy)

2. Steering wheel controls are limited to the Axxess device (the best IMO), and the PAC-SWI which will work too. PAC-SWI is a bit harder to get working simply cause the Axxess device can Autolearn based on wires connected.

2a. Ipod cables - These will have to be the Pioneer adapters which are built for the device, you have a few ways of getting them without having to pay outrageous 80$ and such prices - Amazon, Ebay are your friends. (Perfect exampled OEM Pioneer GPS Antenna for AVIC-X930 : 49.99, OEM Bluetooth Mic - 39.99 | What i paid on Ebay - both the GPS and Mic - 30$ Shipped both.)

Lastly for all the items listed in the question, Look at the install DIY's by AK370 and TennesseeZ. Those are the most informative in regards to the install and such. 2ndly, You don't NEED the Dash Kit that everyone and mostly everyone will Tell you get it. The BHS and AVIC's fit with no issue and have great mounts to the factory OEM Cage which is in the dash. When you get the dash off, you will find the HU mounted into the dash with 4 Phillips Screws, once you get those out (4 screws) the HU is mounted to 2 Aluminum Side Cage Guides - Held in by 4 HEX or TORX , I don't recall. Have a set of Allen wrenches on hand and the Husky (Lowes) Mini Hand driver with 6 TORX bits (5.43$). Once you get them off you can actually take those sides and fit them (PERFECT FIT) to the New Pioneer and screw in with the holes on the sides of the unit and then reassemble.
