Establishing facts is important after an accident, and there will be no reason for them to admit guilt without an impartial third party holding them accountable. This alone puts you at risk. The way your damage looks, they can even come back and say you cut into her lane and caused the accident.

Go through insurance. Period.

IF IF IF you must accept funds privately, make sure the repair quote is final, and that you are with a reputable shop, and that it's certified funds (cashier check). Do not accept personal check. If cash, well, make sure they aren't fake bills. At the money exchange, tie up loose end with signed documents detailing the accident and what the money is for.
