I use Calyx Manifold Dressing to get rid of any rust that builds up on the rotor hats. Here is the website:

It was made for cast iron manifold restoration (use it on my Evo), but I found it works great for the rotor hats also. It isn't paint, so it doesn't burn off with temp. It is also a rust prohibitor.
