Definitely RS3 for your area, they handle high temperatures best of the three.

IMO 275 is going to be a lot of meat on the front with a tire this sticky. Consider a power steering cooler if you track. It's going to require more effort parking and give less feel. Not bad, just more and less. You'll really want to monitor pressure on them constantly so you don't pull to one side, and don't over/underinflate or they'll wear too fast.
