Welcome, another Houston owner, not really sure on the best shops in town yet either. If you want to talk to a few 370z owners & some 350z owners you should come out to
Coffee & Z's. A few guys there have had some good work done on their cars and might know some solid shops in town, plus you get to meet some other owners.
If I was dropping 5k right now, I would try to find a solid balance between performance and handling. You probably will not be able to go all out for 5k but you can get a solid base going and add more later.
