any photos with stock 18" oem wheels on a 370z with these spacers? What sizes are recommended for a flush looks (not sticking out)?

Sorry I don't have any with the 18inch stock wheels. I would recommend 20mm front and 25mm rear. This will give you a flush look, but not sticking out.

Would it be OK to use the hubs that don't require stud replacements?

Yes you can use the bolt on spacers.
