Are we able to choose the spring? I've read that there are two different springs for the BR coilover. I'm looking for a 1" - 1.2" drop and a smooth ride for my daily driven Z. No track days.

Will the BR model require me to cut holes in the rear panels of the interior?

Yes you can choose a taller rear spring, 230mm vs 210mm. Yes you have to cut holes in the trim covers over the rear shock towers to install dampening adjusters.

I have just retro fitted a "true" rear coilover on our g35. I will confirm tomorrow with BC, but this should also be an option for the 370z and obviously works on the 350z as well.
