How does this work? Can you run both or just water meth? I'm guessing I would need different tunes right?

Well, that's up to you. It is recommended to run a 50:50 mixture of water and methanol. Some people run 100% methanol for the best gains in power\torque and additional fueling. You will just need to tune for what you will be running all the time. You must be consistent. Some people use it purely for safety running a 50\50 mix and no additional tuning. Should the system fail you aren't relying on the kit to supply the additional fuel and cooling.

Sorry for the ignorance. I have zero experience with this set up can you tell me what kind of power gains one could reasonably expect from this kit?

No problem. When running a 50:50 mixture you'd be looking at about a 30-50 whp gain when tuned. 100% you could do 80 to 100+ whp.

With that said, the system is SOLD!
