i wonder how hard it would be to swap my touring seats to the convertible ac seats?

I though about that too. Vert seats are cooler!

I am sure they have the same bolt on pattern, but the issue is getting the cooling option. Rewiring probably, maybe different piping or more, etc.

I don't know how the heated seats work in the coupe, but in the vert both the heating and cooling is done with blowing air. FYI, it is awesome to have cooling seats when the top is down on hot days. It feels like someone is pouring ice cold water down your back.

Don't forget including the roadster cooling/heating rheostat controls on the console.

The seats are not air conditioned. They flow ambient air through a fan in the seat back.

I'd do it just for the looks if I ever come across a set of reasonably priced vert seats. Otherwise might as well go aftermarket
