Turn knob and A/C turns on. Can i turn it off?

Tested it out today. Turned car on the AC light was off. None issue.

Auto seems kinda over sensitive. It will blow super hard for example. I might just need to set up higher but seems alot colder than having it on. What do you usually set to? I have 72 and it stills go to level 3 on the AC and doesn't feel that warm certainly.
