And now to rub it in for our Northern friends who can't do outside activities due to the weather :p

9lb pork loin, brined 24hrs and smoked 4 hours over pecan and oak.

What do you use for brining liquid? Anything other than salt?

It's usually salt, sugar, garlic juice, onion juice and a splash of crab boil. For poultry I'll throw in some cut limes and lemons, maybe some white wine.

For bacon, it's salt, sugar and pink curing salt along with some garlic and pepper.

Anyone got anything good going on this Memorial Day? Waiting for some cloud cover to break up and I'll be firing up the pit.

We're going experimental here today. I've somehow never done a brisket before, so there's a small one in my future as well as a whole wild piglet I shot a few weeks back. It's my first whole hog, so I went with the smallest one and I'll turn it all into pulled pork. Not a lot of ribs or belly on these little guys, just all shoulders and hams.

In case I screw the pooch with the new stuff I'm trying, I'll toss a few racks of ribs and some sausages in. Pics to follow.

I will acknowledge that gas grilling is nice in that it's quick, and that it allows the cook to enjoy a cigar with his Blue Moon while cooking. As to taste, however, might as well be at the broiler or stovetop. I'm a lump charcoal with applewood kind of guy, and vastly prefer kamado cooking with the Big a Green Egg.

Yeah, Now yall got me hungry. I'm waiting for her to tell me to light the charcoal.... Just Me and her today, So I got some nice delmonicos, 2 small tuna steaks (making a teriyaki glaze for those) and some grilled cherrystones... Should end up with some nice lunch leftovers. I forgot to mention the locally grown grilled asparagus...

Don't know about recipe's but 4m27s into this video clip from Porsche Carrera Cup at Philip Island last weekend (part of a round of the Australian GT Series), we have a rough approximation of a BBQ (ouch !!).
