Chicken heads end up in the "offal" stream, along with blood and other entrails/viscera. The offal goes to rendering plants (it is sold to them) and the rendering plants process it into protein in various forms. The protein then ends up in dog food, cat food and chicken feed (yes, chickens eat themselves).

Gizzards are harvested separately from the other internals of the chicken. This is also true of the livers, hearts and necks.

There is no such thing as chicken lips.

The paws (feet minus the shank) is the highest profit-margin part of the chicken.

Nothing goes to waste in the chicken during processing.

There is no actual job called "chicken-choker".
