More details on this, did you drill into the cap?

being that that is an oven temp gauge he most likely drilled a hole a little smaller than the probe and shoved it through, maybe some epoxy was used.

All Correct, It gives me feedback on hot days. 150 or lower is good. 150-170 is max and over 170 is time to increase airflow. I track under hood air temp at the supercharger cooler. in my current setup it runs outside + 15F... IE 70F outside is 85F at the cooler. that is at 30 MPH or greater.

At a stop the temp goes up quickly to the actual fluid temp as there is no airflow, but it drops just as quick. It is a NISMO front so the airflow around the cooler is very poor at a stop.

Not epoxy but high temp RTV gasket maker, just a drop.

my tank is getting way too hot, can't even touch it, I think I will need to swap out to a bigger core and maybe a fan....
