absolutely love this mod!! only question is, would i still be able to fit an oil cooler?? or would the plates be in the way?

Depends on which oil cooler you get. I did a diy oil cooler (24 row) and it clears just fine

Can it handle high speed (80mph+) when it is showing? or do you have to hide it when your driving?

It has no problems when its showing since the back of the plate bracket rests against the bumper
