I hit an unpainted speed bump at speed, and it tore the splash shield off. I never bought a new one as it also sheared off most of the bolt/clip holes on the car itself that secures the shield. Would this aluminum plate work, or does it utilize the same holes as the stock plastic shield?

It uses the same holes as the factory one, If the ends of the slots are just torn out it will normally still work as the u nuts pinch the bumper on the sides. If the tabs are just gone you wont have much to attach it to.

Have you or any of your customers installed this in conjunction with the Gamma oil pan?
My OEM shield is getting pretty beat up and will need replacement in the near future.

So long as the pan doesn't hang down lower than the X-Member this should clear perfectly fine. We leave alot of room between the pan and shield.

Good to know!!!! Is there any flexibility to move the access hatch? Or even remove it completely?

Oil access door can be taken off, It is just a slotted fitment, Easily removed, 2 bolts.
